No Name Pasta and Veg Recipe
No name for this. It’s just something I made up as I went along last night and loved it so much I made it again for supper tonight, so I thought I would share the recipe, such as it is.
It’s really quick and easy since the veggies cook while the pasta is cooking … 7 or 8 minutes total.
Get your ingredients ready before you start so it will all finishes cooking at the same time.
Not only is it delicious, but with the olive oil and four (count them, 4) serving of vegetables, it is healthy, totally guilt-free, and Weight Watchers friendly as well. Use whole grain pasta and you will be golden.
Serves one…or one of me, anyway, but can easily be adjusted as needed for more people.
No Name Pasta and Veg

Ingredients
- 1/2 cup pasta
- 1-2 tbsp olive oil
- 1 medium onion sliced
- 2-3 cloves garlic crushed or sliced thin
- 1/2 bunch brocolli rabe
- 1/2 cup snap peas
- 1/2 cup grape tomatoes, cut in half
Instructions
- As soon as you start your pasta cooking, heat olive oil in a frying pan.
- Add onion and garlic, saute for a minute or two
- Add the sugar snap peas and broccoli rabe.
- Toss together and cook until crisp tender
- Add the tomatoes at the last minute since you don’t want them cooked, just slightly warmed
- Drain the pasta, toss in the veggies, season to taste with salt and pepper
- Sprinkle with freshly grated parmesan cheese and serve
