Blueberry Season: Time for Muffins
As you may have heard, it’s Blueberry Season. To celebrate, I’ll be posting blueberry recipes all week. What better way to start than blueberry muffins?
Blueberry Muffins
Servings: 12 regular muffins (6 extra large)
Ingredients
- 1 egg
- 3/4 cup milk
- 1/2 cup oil
- 1 tsp salt
- 2 cups flour
- 2/3 cup sugar
- 3 tsp baking soda
- 1 tsp vanilla
- 1-1/2 cups blueberries
Instructions
- Beat egg
- Stir in milk, oil, and vanilla
- Add dry ingredients all at once, stir just until flour is moistened (batter will be lumpy)
- Gently fold in blueberries
- Fill greased or paper cup lined muffin tins ¾ full (an ice cream scoop works well for this)
- Bake at 400F until golden brown ... about 20 minutes
