Orange-Rosemary Biscotti

Ingredients

  • 2 cups flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup sugar
  • 4 tablespoons softened butter
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 teaspoons orange extract
  • Zest of 1 large orange
  • ½ cup walnuts rough chopped
  • 2 tablespoons finely chopped fresh rosemary

Instructions

  • Preheat oven to 350F and line a large baking sheet with parchment paper.
  • Sift flour, baking powder, and salt in a large bowl.
  • In a smaller bowl, cream butter and sugar together. Add the eggs, vanilla, orange extract, orange zest and rosemary. Beat together until smooth.
  • Make a well in center of flour and pour in the beaten ingredients.
  • Add the chopped nuts and blend well.
  • With well floured hands, lightly knead the dough in the bowl until uniform.
  • Divide dough in two equal parts. Place each on baking sheet and form each into a 12”x 2” log.
  • Bake for 30-35 minutes until slightly golden in color.
  • Remove from baking sheet and cool for 10 minutes.
  • Using a serrated knife, cut each log into ⅜” slices and place them on baking sheet.
  • Bake for 6 minutes then turn slices over and bake for an additional 6 minutes.
  • Place on wire racks to cool.
