Orange-Rosemary Biscotti
Ingredients
- 2 cups flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 cup sugar
- 4 tablespoons softened butter
- 2 eggs
- 1 teaspoon vanilla
- 2 teaspoons orange extract
- Zest of 1 large orange
- ½ cup walnuts rough chopped
- 2 tablespoons finely chopped fresh rosemary
Instructions
- Preheat oven to 350F and line a large baking sheet with parchment paper.
- Sift flour, baking powder, and salt in a large bowl.
- In a smaller bowl, cream butter and sugar together. Add the eggs, vanilla, orange extract, orange zest and rosemary. Beat together until smooth.
- Make a well in center of flour and pour in the beaten ingredients.
- Add the chopped nuts and blend well.
- With well floured hands, lightly knead the dough in the bowl until uniform.
- Divide dough in two equal parts. Place each on baking sheet and form each into a 12”x 2” log.
- Bake for 30-35 minutes until slightly golden in color.
- Remove from baking sheet and cool for 10 minutes.
- Using a serrated knife, cut each log into ⅜” slices and place them on baking sheet.
- Bake for 6 minutes then turn slices over and bake for an additional 6 minutes.
- Place on wire racks to cool.
