Chive Biscuits
Chive Biscuits
These biscuits are my guilty pleasure. They are to die for! This is based on Ina Garten's recipe on Food Network.
Ingredients
- 2 cups flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 stick of cold butter diced
- ¾ cup half and half
- ½ cup fresh chives or fresh parsley leaves
- 1 egg mixed with 1 tablespoon water for egg wash
Instructions
- Preheat oven to 400 degrees.
- Combine the flour, baking powder, salt, and sugar in the bowl of an electric mixer with the paddle attachment.
- Add the butter and mix on low speed until the butter is the size of peas.
- With the mixer on low, add the half and half and beat until just mixed.
- Add the chives and mix until just combined.
- Dump the dough out onto a well-floured board and knead lightly into a rectangle ¾” thick.
- Cut out rounds with a 2-½” round cutter and place on a sheet pan lined with parchment paper.
- Brush with egg wash.
- Bake for 20-22 minutes until the tops are browned and the insides are firm. Serve warm.
Notes
I diverge from the recipe in a few non-critical areas. I don’t use the mixer. I cut the butter into the flour using a pastry blender or two knives until butter is the size of peas, I sometimes substitute plain milk which works just fine, and I eliminate the egg wash because I found it really didn’t matter, so why bother. I have never tried making them with parsley because I always have my own either fresh or frozen chives on hand and I like their flavor. But whatever you do, don’t play too much with the dough or the biscuits will be tough.
