Blueberry Bread Pudding
Another blueberry dessert that is to die for is one of my own inventions, Blueberry Bread Pudding. It’s on the same order as the Blueberry Cobbler, but with a delicious bread pudding topping instead of cottage pudding.

Blueberry Bread Pudding
Ingredients
Blueberry Filling
- 6-8 cups fresh blueberries
- 1/2 cup sugar
- 2 tbsp flour
- 8-12 slices plain white bread
Hot Custard
- 2 cups milk
- 4 tbsp butter
- 2 eggs
- 1/2 cup sugar
- 1 tsp vanilla
Instructions
Blueberry Filling
- Grease a 9x13" baking dish
- Mix 6 or 8 cups of fresh blueberries with ½ cup sugar and 2 tbs. flour and spread evenly in baking dish
- Place plain white bread slices (with crusts) 2 layers deep over fruit, covering it completely (Warning: Italian bread will not work with this recipe. Use plain old white bread only.)
Hot Custard
- Heat 2 cups milk and 4 Tbs.butter in a 3 qt. saucepan until butter is melted and milk is scalded
- *Let cool to almost lukewarm
- Beat 2 eggs with ½ cup sugar and 1 tsp. vanilla
- Mix eggs into the milk and pour over casserole making sure the bread is well saturated
Finish
- Pour the hot custard over the bread layer, making sure the bread is well saturated
- Bake uncovered at 375 F until puffed and golden brown. The puff will fall, but that’s okay.
- *You can mix the egg mixture into the hot milk, but you must temper the eggs first or they will turn into scrambled eggs. Since most casual cooks don’t know about tempering, it’s safer to just let it cool down a bit instead.

I just stumbled upon your website. You’ll excuse me for taking so long getting to it, I hope. Will be trying this recipe at half the ingredients on my first attempt w/whole wheat flower. If it works out – I’ll make the whole recipe. I will surely appraise you on the results and for the benefit of others who are experimenting. I hope your warning about italian bread won’t apply to my substitute. Fingers crossed! lol.
