Blueberry Cheesecake (No Bake)

This blueberry cheesecake is easy to make and requires no baking.  It’s a bit on the pricey side what with all the ladyfingers, heavy cream and cream cheese, but it’s well worth the expense and is great for special occasions.

Blueberry Cheesecake

Ingredients

  • 3 8 ounce packages cream cheese softened
  • 3 cups heavy cream
  • ¾ cups sugar
  • 1 tbs. vanilla
  • 3 packages ladyfingers
  • 1 can blueberry pie filling Comstock is best

Instructions

  • Blend cream cheese, sugar, and vanilla until smooth. Whip cream and fold into cream cheese.
  • Line the sides of a springform pan with ladyfingers and then line the bottom.
  • Pour in half of the cheese mixture then place a layer of ladyfingers over the filling.
  • Add remaining cheese mixture.
  • Top with blueberry pie filling.
  • Chill at least 2 hours before serving.

Notes

Note: the blueberry topping is normally spread to cover the whole top of the cake, but I used new springform pan and didn’t realize until too late that it was a little shallower than usual and I didn’t want the blueberries to start dribbling down the sides. The higher-sided pan keeps the blueberries in place until set.
